Mexican Pizza
This ain’t your soggy fast food Mexican pizza. This is also a great recipe for the grill!
2 chorizo sausages – to make this recipe extra simple we used Aidel’s
2 red or orange bell peppers, sliced
½ medium red onion, sliced lengthwise
1 pre-cooked pizza shell – you can cook your own or buy a premade one like Boboli
1 cup Original Killer Salsa
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ crumbled feta
1 diced Roma tomato
2-3 scallions sliced
2 T sherry vinegar
Cook the sausages in a medium skillet until browned on all sides and cooked through (if not using pre-cooked). Slice and set aside. Add a drizzle of olive oil to the pan and cook the sliced bell pepper and red onion until beginning to soften.
Top your pizza shell with Killer Salsa, then both shredded cheeses and finally the sausage, bell pepper and onion. Bake at 450 until crust is crisp and cheese is bubbling.
Remove from heat and top with crumbled feta, diced tomato and sliced scallions. Drizzle with sherry vinegar.
Cut into 8 pieces and serve immediately.
